Prepared foods as a retail category is rapidly expanding. Consumers
demand more convenience, and services for special meal needs are
increasingly based on centralized preparation of meals for subsequent
distribution. Retail display and distribution systems require the
holding of highly processed food items for substantial periods of time. The
result is that the food industry is faced with safety and wholesomeness
