Case ready food packaging is the most dominant trend in food retailing in
the last five years. More and more meat and seafood offerings are
shipped to the retail point as case ready items. The whole case ready
concept requires shelf life extension methods. These methods, often
involving oxygen barrier films and other reduced oxygen techniques puts food
at risk due to the enhancement of bacterial growth of pathogenic anaerobes.
